Roast the almonds in a pan without fat, take them out. Crush the lady fingers. Mix both and distribute in 8 glasses. Peel oranges so that the white skin is completely removed. Remove the fillets with a sharp knife between the parting skins. Distribute into the glasses.
Squeeze the juice from the orange peel. Mix the mascarpone, curd, vanilla flavouring, lemon juice, 4 tablespoons of orange juice, sugar and coffee with the whisk of the hand mixer. Spread on the glasses and put them in a cool place for about 30 minutes. Just before serving, decorate with amaretti or carved orange peel or dust with cocoa. Use a stencil for this
