Sauerkraut potato soup with bacon

Ingredients

Servings: 4
  • 400 g Potatoes
  • 1 Onion
  • 1 (200 g) large carrot
  • 200 g streaky smoked bacon
  • 1 TABLESPOON Oil
  • 1 l Vegetable broth (instant)
  • 1 can(s) (580 ml) Sauerkraut
  • 1/2 bunch Spring onions
  • 1/8 l apple juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper

Directions

    Peel, wash and dice the potatoes. Peel and finely chop the onion. Peel and finely dice the carrot. Cut bacon into cubes. Heat oil in a pot. Fry the bacon for about 2 minutes.

    Add potatoes and onion and fry for another 3 minutes. Add stock, bring to the boil and cook for 15 minutes. Clean and wash spring onion and cut into rings. Add sauerkraut, spring onions and apple juice to the stock and cook for another 5 minutes.

    Season potato and sauerkraut soup with salt and pepper.
