Potato salad with meatballs, cucumber, tomato, paprika, onions and romaine lettuce

Ingredients

  • 1.2 kg Potatoes
  • 4 Eggs
  • 1 pickled cucumber
  • 1 red, yellow and green peppers
  • 4 Tomatoes
  • 250 g Rocket salad
  • 2 Onions
  • 2 Garlic cloves
  • 500 g Whole milk yoghurt
  • 100 g Salad Mayonnaise
  • 1 TEASPOON Lemon juice
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp white pepper
  • 500 g Pork sausage
  • 7-10 Tbsp Sweet peppers
  • 3 TABLESPOONS Oil
  • 7-10 Tbsp Parsley

Directions

    Wash the potatoes and boil them covered with water, cook for about 20 minutes, drain, quench, peel and cool. Boil eggs in boiling water for 10 minutes, drain, quench, peel.

    Wash the cucumber and paprika. Quarter the cucumber and cut into pieces. Clean the paprika and cut into pieces. Clean, wash and chop the tomatoes. Wash lettuce and cut into strips. Peel and finely dice onions.

    Peel the garlic and press it through a garlic press. Mix yoghurt, mayonnaise and lemon juice. Season with salt, sugar and pepper. Stir in the garlic and half the onions. Cut the potatoes into slices.

    Mix cucumber, peppers, tomatoes, lettuce, potatoes and sauce. Knead the sausage and the remaining onion. Season with pepper and paprika powder. Form small balls from the minced meat. Heat the oil in a pan.

    Fry the balls for 5-6 minutes at medium heat. Cut the eggs into slices. Season potato salad again. Carefully fold in meatballs and eggs. Wash parsley, chop finely and sprinkle over the salad.
