Juicy potato salad

Ingredients

  • 800 g Potatoes
  • 2 red onions
  • 150 g Gherkins
  • 1/8 l Vegetable broth (instant)
  • 6 TABLESPOONS Cucumber water (from the glass)
  • 30 g Capers
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 (approx. 200 g) red apple
  • 2 (approx. 350 g) yellow peppers
  • 1/2 bunch Dill
  • 1/2 bunch Chives
  • 150 g Miracel Whip

Directions

    Wash the potatoes and cook in boiling water for about 20 minutes. In the meantime peel onions and cut them into thin rings. Dice gherkins. Drain the potatoes, rinse with cold water and peel the skin.

    Cut the potatoes into slices. Bring stock and cucumber water to the boil in a pot. Add onions and capers and fry. Season with salt and pepper. Pour over the potatoes and leave to stand for 15-20 minutes.

    Apple wash, halve, core and cut into cubes. Halve, clean, wash and slice the peppers into fine strips. Wash dill and chives and dab dry. Chop dill finely, cut chives into fine rolls.

    Mix Miracel Whip with herbs, except for 1 tablespoon, some salt and pepper. Mix the cucumber, apple, pepper strips and Miracel Whip into the potatoes and leave to soak for approx. 30 minutes. Season again with salt, pepper and possibly some cucumber water and arrange on a large platter.

    Serve sprinkled with remaining chopped herbs.
