Peel 2 onions and chop finely. Peel, quarter, core and roughly grate apples. Heat 1 tablespoon of oil in a frying pan, fry the onions and apples for 2-3 minutes. Drain the cucumbers and dice them. Mix together with the marjoram into the apple-onion mixture. Season with salt and pepper and let it cool down.
Knead the dumpling dough once and put it on a tea towel sprinkled with potato flour. Dust with potato flour and roll out to a rectangle (25 x 28 cm). Spread liver sausage on top and press it smooth with slightly damp hands. Spread apple mixture on top. Roll up from the short side using the tea towel. Heat 3 tablespoons of oil in a large ovenproof pan. Fry the roll for 1-2 minutes on each side. It is best to turn over with a large pallet.
