Potato roll with apple-liver sausage filling

Ingredients

Servings: 5
  • 4 medium-sized onions
  • 2 (approx. 300 g) Apples
  • 5 TABLESPOONS Oil
  • 200 g Gherkins
  • 2 TEASPOONS dried marjoram
  • 7-10 Tbsp Salt
  • 7-10 Tbsp black pepper
  • 1 package (750 g) Dumpling dough "Thuringian style"
  • 250 g coarse liver sausage
  • 7-10 Tbsp Marjoram
  • 7-10 Tbsp Potato flour

Directions

    Peel 2 onions and chop finely. Peel, quarter, core and roughly grate apples. Heat 1 tablespoon of oil in a frying pan, fry the onions and apples for 2-3 minutes. Drain the cucumbers and dice them. Mix together with the marjoram into the apple-onion mixture. Season with salt and pepper and let it cool down.

    Knead the dumpling dough once and put it on a tea towel sprinkled with potato flour. Dust with potato flour and roll out to a rectangle (25 x 28 cm). Spread liver sausage on top and press it smooth with slightly damp hands. Spread apple mixture on top. Roll up from the short side using the tea towel. Heat 3 tablespoons of oil in a large ovenproof pan. Fry the roll for 1-2 minutes on each side. It is best to turn over with a large pallet. Bake in a preheated oven (electric cooker 175 °C/ convection oven: 150 °C/ gas: level 2) for 15-25 minutes. Peel 2 onions and cut into thin rings. Heat 1 tablespoon of oil in a pan and fry the onion rings until golden brown. Rolls are best sliced with an electric knife.

    Fry the roll for 1-2 minutes on each side. It is best to turn over with a large pallet. Bake in a preheated oven (electric cooker 175 °C/ convection oven: 150 °C/ gas: level 2) for 15-25 minutes. Peel 2 onions and cut into thin rings. Heat 1 tablespoon of oil in a pan and fry the onion rings until golden brown. Rolls are best sliced with an electric knife. Garnish with onion rings and marjoram. Served with salad
