Wash the potatoes and cook in boiling water for about 20 minutes, drain, rinse and peel. Cut the smoked pork loin into cubes. Clean and wash spring onions and cut them into pieces. Heat 2 tablespoons of oil in a pan.
Fry the cured pork in it for about 10 minutes. After 5 minutes add the potatoes. Finally add spring onions and fry briefly. Season with salt and pepper. Keep the potato pan warm. Heat remaining oil in a pan, add eggs and fry over medium heat for 4-5 minutes.
Season with salt and pepper. Serve eggs and potatoes together. Small gherkins taste good with them.
