Wash the potatoes. Cook in boiling salted water for about 15 minutes. Meanwhile peel and finely chop garlic and onion. Wash the smoked pork, dab dry and cut into cubes. Clean and wash spring onions and cut into rings. Peel and chill the potatoes. For the sauce melt fat, fry onion and garlic.
Sweat flour in it and deglaze with cream and milk. Stir in sliced pork, spring onions and parmesan. Season to taste with salt and pepper. Fill potatoes and sauce into an ovenproof dish. Bake in a preheated oven (electric cooker: 200 °C/ gas: level 3) for about 15 minutes until golden brown. Serve garnished with parsley
