Ingredients

  • 1/2 l Plum juice
  • 6 TABLESPOONS Lemon juice
  • 5-6 Tbsp demerara sugar
  • 600 g Plums
  • 100 ml Rum
  • 1 TEASPOON Cornstarch

Directions

    Mix plum and lemon juice and 1-2 tablespoons of brown sugar. It is best to divide into 2 flat moulds and place in the freezer. (Distributed in 2 forms, the Granita will be frozen after 2 1/2 hours.) Stir Granita at intervals. For the compote, clean, wash, halve and stone the plums. Mix with 4 tablespoons of brown sugar and rum. Simmer for about 10 minutes.

    Mix starch and 3 tablespoons of water until smooth and stir into the plum liquid. Bring to the boil briefly, let cool off. Divide the compote into 4 glasses. Fill up with the Granita and serve immediately
