Put almonds briefly in boiling water. Then peel them from the skin. Put them on a tray. Leave to dry in a slightly heated oven for about 1 hour. Let the almonds cool down well and puree them in a mixer.
Mix sugar, bitter almond oil and almonds evenly. Lightly beat the egg white. Gradually add to the almonds until a firm dough is formed. Dust the baking tray with flour. Place small heaps on top and bring into shape.
Dust with icing sugar. Dry in a preheated oven (electric cooker: 100 °C/ gas: level 1) for approx. 1 1/4 hours. Dust again with icing sugar and serve.
