Cut the plums, apricots and figs into small cubes. Chop the chocolate. Bring sugar and 3 tablespoons of water to the boil briefly. Add prepared ingredients, almonds, raisins, calvados, candied lemon peel, orange and lemon peel and 1 pinch of salt. Simmer for about 5 minutes, then let it cool down.
Form a roll (about 30 cm long) on a work surface dusted with icing sugar. Wrap in foil and let it rest for a few days. Turn again on a work surface dusted with icing sugar and cut into pieces. Serve decorated with candied fruit wedges
