Ingredients

  • 1⁄2 Cubes (21 g) fresh yeast
  • 500 g + some pizza flour (alternatively wheat flour, type 405)
  • 75 g Durum wheat semolina
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1⁄8 l wheat beer
  • 75 ml + 7-8 tsp olive oil
  • 1 kg Gyroshredded (meat counter)
  • 2 packs (125 g each) Mozzarella
  • 150 g medieval Gouda (piece)
  • 1 Pot of basil
  • 8 TABLESPOONS Barbecue sauce (bottle)

  • 7-10 Tbsp Aluminium foil

Directions

    Crumble yeast in 1⁄8 l lukewarm water, dissolve in it and let it stand for about 10 minutes. Mix 500 g flour, semolina and 2 tsp. salt. Add yeast water and beer, stir everything briefly, cover and let it swell for about 10 minutes.

    Add 75 ml of oil and knead with your hands for 8-10 minutes to a smooth dough. Cover and leave to rise in a warm place for about 45 minutes. Then knead the dough again well, divide into 5 portions, form into balls and let it rise again covered for about 30 minutes.

    In the meantime heat a large pan without fat. Fry the gyros meat in it in portions, turning them golden brown and take them out. Grate mozzarella and gouda roughly and mix. Wash basil and shake dry, pluck the leaves.

    Preheat oven (electric cooker: 225 °C/circulating air: 200 °C/gas: see manufacturer) and line a baking tray with baking paper.

    Roll out 4 dough balls one after the other on a lightly floured work surface until round (approx. 24 cm Ø). Place them one after the other on the baking tray, spread a thin layer of 1 tsp. oil on each and prick several times with a fork.

    Bake in a hot oven for 8-10 minutes until golden brown. Remove.

    For the pizza cake, spread the last baked pizza base on the baking tray with 2 tablespoons of barbecue sauce. Cover with about 1⁄4 gyros, 1⁄4 cheese and some basil leaves. Cover with another base, cover the same and continue until the base, meat and cheese are used up.

    Roll out the remaining dough to a strip (approx. 10 x 80 cm) and wrap it around the pizza cake as a border. Press the edge and spread a thin layer of 3-4 tsp. oil. Bake in the oven at the same temperature for 25-30 minutes.

    Cover with foil after about 20 minutes.

    Remove and leave to cool for 5-10 minutes, then garnish with remaining basil. Tsatsiki tastes good with it.
