Ingredients

  • 1⁄2 Cubes (21 g) fresh yeast (or 1 packet of dry yeast)
  • 1 TEASPOON Sugar
  • 500 g Flour
  • 1 1⁄2 Tsp Salt
  • 8-9 Tbsp Olive oil
  • 7-10 Tbsp Flour
  • baking paper
  • 4 discs Bacon (breakfast bacon)
  • 2 red onions
  • 2 Garlic cloves
  • 1 red pepper
  • 300 g mixed minced meat
  • 7-10 Tbsp salt, pepper
  • 2-3 TABLESPOONS Tomato paste
  • 1 can(s) (425 ml) chunky tomatoes
  • 7-10 Tbsp Sugar
  • 200 g cherry tomatoes
  • 50 g Parmesan (piece)
  • 4 Eggs (Gr. M)
  • 1 Avocado
  • 7-10 Tbsp Chili Flakes

Directions

    For the dough, put 250 ml of lukewarm water in a bowl. Crumble yeast into it and dissolve with sugar while stirring. Leave to stand for about 10 minutes until small bubbles appear.

    Mix flour and salt in a large mixing bowl. Add yeast water and 6 tablespoons of oil. First knead everything with the dough hooks of the mixer. Again add 2-3 tablespoons of oil and knead with your hands to a smooth, supple dough.

    Form the dough into a ball, put it back into the bowl and dust with flour. Cover the dough with a clean tea towel and leave to rise in a warm place for about 1 hour until its volume has doubled.

    For the topping, heat a large coated pan without grease. Leave the bacon in it while turning it until crispy. Take it out, cut it in half and let it drip off on kitchen paper. Peel and finely dice the onions.

    Peel and finely chop the garlic. Clean and wash the bell peppers and cut them into cubes of about 1 cm.

    Heat the used pan. Stir-fry the minced meat for 5-6 minutes until crumbly brown. Season well with salt and pepper. Add onions, garlic and paprika and stir-fry for 2-3 minutes.

    Stir in tomato paste and sweat briefly. Add the tomatoes. Bring to the boil and simmer for 3-4 minutes. Season to taste with salt, pepper and 1 pinch of sugar. Remove from heat. Wash the cherry tomatoes and dab dry.

    Preheat oven (electric cooker: 220 °C/circulating air: 200 °C/gas: see manufacturer). Line two baking trays with baking paper. Knead the dough briefly on a lightly floured work surface. Halve the dough.

    Roll out each half with a cake roll round (approx. 26 cm Ø) and place on a baking tray. Brush each half with chopping mix, leaving a rim of about 1.5 cm all around. Cover with bacon and cherry tomatoes.

    Sprinkle with cheese. Bake pizzas one after the other on the second rack from the bottom for 12-15 minutes. Put the eggs individually into four cups. After about 10 minutes, slide 2 eggs onto each pizza and bake until done.

    Halve the avocado, remove the seeds, carefully remove the flesh from the skin with a tablespoon and cut into thin slices. Cover finished pizzas with avocado. Sprinkle with chilli flakes and serve.
