Lahmacun (Turkish pizza)

Ingredients

  • 1⁄2 Cubes (21 g) fresh yeast
  • 1 TABLESPOON sugar, salt, pepper
  • 500 g + some flour
  • 3 white + 2 red onions
  • 6 ripe tomatoes
  • 2 Turkish peppers
  • 2 Garlic cloves
  • 1 collar Parsley
  • 250 g minced lamb or beef
  • 100 ml Olive oil
  • 3 TABLESPOONS Tomato paste
  • 2 TABLESPOONS Beaver Salçasi (available in Turkish food stores)
  • 1 TEASPOON dried thyme
  • 1-2 TEASPOONS ground cumin
  • 1⁄2 Tsp Pul Biber (available in Turkish food stores)
  • 1 Mini cucumber
  • baking paper

Directions

    Stir yeast and sugar until liquid. Put 500 g flour, 1 pinch of salt and liquid yeast in a bowl. Gradually knead in about 350 ml of lukewarm water with the dough hooks of the mixer until a smooth yeast dough is formed.

    Cover and leave to rise in a warm place for about 45 minutes.

    Peel white onions. Clean and wash 2 tomatoes and peppers. Peel garlic, wash parsley. Dice everything finely and knead with minced meat, oil, tomato paste and beaver salçasi. Season with salt, pepper, thyme, cumin and Pul beaver.

    Line a baking tray with baking paper. Preheat the oven (electric cooker: 200 °C/circulating air: 175 °C/gas: level 3). Divide dough into 10-12 pieces. Roll each piece out round (approx. 20 cm Ø) on a little flour.

    2 Place the flat cakes on the baking tray. Spread a thin layer of minced meat mass on each one and bake in a hot oven for about 10 minutes. Bake 8-10 more pizzas from the remaining pancakes and the chopped mass.

    Wash cucumber and 4 tomatoes, peel red onions. Slice everything into thin rings. Cover Lahmacun with tomatoes, cucumber and onions and roll up if necessary. Serve with a creamy yoghurt or a glass of Ayran (refreshing drink with yoghurt, ice-cold water and salt).
