Noodle-Kabanossi salad with yoghurt mayonnaise

Ingredients

Servings: 6
  • 500 g Noodles (e.g. Farfalle)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 1 Basic recipe mayonnaise (see recipe search)
  • 100 g low-fat yoghurt
  • 500 g Date tomatoes
  • 150 g Kabanossi
  • 200 g Arugula
  • 7-10 Tbsp coarse black pepper

Directions

    Cook the pasta in approx. 4 l boiling salted water (approx. 1 teaspoon salt per litre) according to the instructions on the packet. Pour into a sieve and rinse with cold water. Drain and let cool off.

    In the meantime, prepare a mayonnaise according to the basic recipe (see recipe search). Stir in yoghurt. Season to taste with salt and pepper. Mix with the noodles.

    Wash the tomatoes and cut into slices. Cut Kabanossi into thin slices. Clean, wash, shake dry and cut rocket salad into smaller slices.

    Mix the tomatoes, kabanossi and rocket into the noodles. Cover the pasta and let it stand for at least 30 minutes. Season again with salt and pepper. Arrange noodle salad and sprinkle with black pepper.
