Peppermint Apricot Ice Tea

Ingredients

  • 2 untreated lemons
  • 1 bunch of spearmint
  • 2 TABLESPOONS demerara sugar
  • 200 g Apricots

Directions

    Wash the lemons, cut one into slices. Wash the mint, dab dry, put some twigs aside. Cut the rest roughly. Put lemon slices and mint in a container and boil 1 litre of boiling water over it. Leave to stand for about 20 minutes.

    Pour the tea through a sieve, mix with sugar and let it cool down. In the meantime, cut the skin of the apricots crosswise. Scald with boiling water. Quench apricots cold, peel skin. Cut the apricots in half, remove the stone. Cut the fruit into slices. Add apricots to tea, chill for at least 2 hours. Halve remaining lemon and cut into slices, add to cold tea. Serve decorated with remaining mint.
