Peaches in red wine

Ingredients

  • 4 ripe peaches
  • 1/4 l Red wine
  • 1/4 l Sour cherry nectar
  • 80 g Sugar
  • 7-10 Tbsp peel of 1/2 untreated lemon
  • 1 Cinnamon stick
  • 15 g Cornstarch
  • 4 (30 g each) Vanilla ice cream curls
  • 1-2 TEASPOONS finely chopped pistachio kernels
  • 7-10 Tbsp Mint

Directions

    Wash the peaches and scratch the skin crosswise. Bring plenty of water to the boil in a pot, remove from the heat and add the peaches for 1-3 minutes. Lift them out with a skimmer, rinse under cold water and drain. Peel the skin off the peaches, cut the peaches in half and remove the stone. Bring red wine, cherry nectar, sugar, lemon peel and cinnamon to the boil and simmer in an open pot for about 5 minutes. Add the peaches and simmer for another 3-4 minutes. Place the peaches in a bowl with a skimmer.

    Remove lemon peel and cinnamon. Stir cornflour with a little water until smooth, add to the boiling stock and bring to the boil again briefly. Cut 4 peach halves into slices as desired. Pour the red wine sauce over the remaining peach halves and let them cool down. Arrange one peach half and peach slices with vanilla ice cream curl on plates. Serve sprinkled with pistachios and decorated with mint
