Ingredients

Servings: 4
  • 8 Ladyfingers (60 g)
  • 6-8 TABLESPOONS cold coffee
  • 4 peach halves + 3-5 tablespoons peach juice (tin)
  • 150 g Whipped cream
  • 125 g Mascarpone (Italian cream cheese)
  • 150 g Whole milk yoghurt
  • 2-3 TABLESPOONS Sugar
  • 1 TEASPOON Bourbon vanilla sugar
  • 1-2 TABLESPOONS Amaretto liqueur
  • 7-10 Tbsp Cocoa and icing sugar
  • 7-10 Tbsp Mint

Directions

    Place lady fingers on a plate and sprinkle with coffee

    Drain the peaches well and cut them into narrow slices. Whip the cream until stiff. Mix mascarpone, yoghurt, sugar, vanilla sugar, liqueur and juice with a whisk until creamy. Fold in cream and chill the cream if necessary

    Spread the lady fingers on 4 plates and cover with the peach slices. Pour the cream over them. Dust with cocoa and icing sugar. Decorate with mint

    -You can also layer all the ingredients in a large mould as for classic tiramisu, leave to soak for a few hours and serve

    -Who also wants to keep a slim line for dessert, replace the mascarpone with low-fat curd or light cream cheese
