Knead flour, sugar, vanillin sugar, fat in pieces, egg, salt and lemon juice until smooth. Cover and chill for approx. 45 minutes
Roll out on flour 3 mm thick. Cut out about 40 leaves in a circle (approx. 8 cm Ø): cut out circles next to each other and cut out the same circles in half and in the middle to make leaves.
Place on baking trays lined with baking paper. Whisk the egg yolks, brush the leaves with them and sprinkle with almonds and sugar. Bake in a hot oven (electric cooker: 200 °C/ convection oven: 175 °C/gas: level 3) for approx. 10 minutes. Cool down, dust with icing sugar
