Pea soup with coriander

Ingredients

  • 3 Onions
  • 1 collar Soup Greens
  • 1 Loorbeerblatt
  • 1 TEASPOON Peppercorns
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Sugar
  • 1 (approx. 75 g) floury potato
  • 300 g frozen peas
  • 2 TABLESPOONS lactose-free butter
  • 1/2 Pot of coriander
  • 1 TEASPOON Lemon juice
  • 7-10 Tbsp Pepper

Directions

    For the broth, cut 2 onions into large pieces. Clean the soup greens and wash very thoroughly. Peel carrots and celery root. Put aside the peelings and cut greenery. Cut soup greens and celery greens into large pieces. Heat the oil in a large pot.

    Put onion pieces, soup greens in pieces, set aside peels, bay leaf and peppercorns in the pot. Sweat for about 5 minutes. Add approx. 1.5 litres of water. Salt, bring to the boil and simmer gently over a low heat for about 1 hour. Pour stock through a sieve (better: sieve with inserted, moistened passing cloth/etamine) into another pot. Reduce stock to approx. 800 ml or, if necessary, top up with water. Season to taste with salt and a pinch of sugar. Peel and chop 1 onion. Peel, wash and dice the potatoes. Melt butter in a pot, fry onion and potato. Set aside 1/4 of the peas. Add the remaining peas to the pot and sauté briefly.

Deglaze with broth, bring to the boil and simmer covered for about 10 minutes. In the meantime wash coriander, dab dry, remove leaves and chop coarsely. Put some coriander aside for sprinkling. Add the remaining coriander to the soup 1-2 minutes before the end of the cooking time. Puree the soup very finely with the cutting stick, add the remaining peas to the soup and bring to the boil. Season to taste with lemon juice, salt, pepper and 1 pinch of sugar. Arrange soup in bowls and sprinkle with remaining coriander

Season to taste with lemon juice, salt, pepper and 1 pinch of sugar. Arrange soup in bowls and sprinkle with remaining coriander
