Ingredients

  • 3 plain rolls from the day before
  • 2-3 medium-sized onions
  • 75 g Almond kernels with skin
  • 750 g mixed minced meat
  • 750 g Pork sausage
  • 12-13 Eggs (size M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 1 TABLESPOON medium hot mustard
  • 1 TABLESPOON Pizza spice
  • 50 g Sultanas
  • 1/2 TEASPOON ground cinnamon
  • 7-10 Tbsp Cayenne pepper
  • 300 g Whole milk yoghurt
  • 1-2 Garlic cloves
  • 3 Stem(s) fresh mint
  • 1 TABLESPOON Lemon juice
  • 2-3 (250 g) medium-sized tomatoes
  • 200 Mozzarella cheese
  • 5 discs Bacon
  • 1 TABLESPOON Oil
  • 100 g grated medieval Gouda cheese
  • 9-10 egg yolk Pepperoni (80-100 g)
  • 7-10 Tbsp Marjoram and lemon
  • 7-10 Tbsp Oil

Directions

    Soak rolls in cold water. Peel and finely dice the onions. Chop the almonds coarsely. Squeeze the bread roll well and put it in a mixing bowl together with minced meat, ground pork, onions, 3 eggs, some salt, pepper, paprika and mustard. Knead with the dough hook of the hand mixer. Divide the minced meat into three. Set aside 1/3 for the Holsteiner meatballs.

    Knead the pizza spice under 1/3 and under the other 1/3 chopped almonds, sultanas, cinnamon and some cayenne pepper. Form 9-10 meatballs from each mixture with moistened hands. Brush 2 baking trays (approx. 37 x 32 cm) with oil and spread the meatballs on top. Bake the baking trays one after the other in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 25 minutes. (It is best to start with the pizza meatballs and part of the oriental meatballs. Approx. 16 meatballs fit on one baking tray) For the yoghurt dip, peel the garlic and press it through a garlic press. Wash the mint, dab dry and cut into fine strips, except for something for garnishing. Mix yoghurt, garlic and mint. Season to taste with salt, pepper and lemon juice. Wash the tomatoes, rub dry and cut into slices. Drain mozzarella and cut into slices. Take oriental meatballs out of the oven. Cover pizza meatballs with one slice of mozzarella and tomato each, sprinkle with pepper or pizza spice and fry for another 5 minutes. For the Holsteiner meatballs, cut slices of bacon in half. Heat the oil of a frying pan and crisp up the bacon in it, take it out and fry 9-10 eggs in two portions as fried eggs in the hot pan.

    Season to taste with salt, pepper and lemon juice. Wash the tomatoes, rub dry and cut into slices. Drain mozzarella and cut into slices. Take oriental meatballs out of the oven. Cover pizza meatballs with one slice of mozzarella and tomato each, sprinkle with pepper or pizza spice and fry for another 5 minutes. For the Holsteiner meatballs, cut slices of bacon in half. Heat the oil of a frying pan and crisp up the bacon in it, take it out and fry 9-10 eggs in two portions as fried eggs in the hot pan. Season with salt and pepper. Place a fried egg on each Holsteiner meatball, sprinkle with grated cheese. Bake in a hot oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 4-5 minutes. Garnish pizza meatballs with a pepperoni and marjoram. Arrange the meatballs on a large plate or in a bowl. Garnish oriental meatballs with lemon wedges and mint, cover Holsteiner meatballs with the bacon. Add yoghurt dip and ciabatta

    Season with salt and pepper. Place a fried egg on each Holsteiner meatball, sprinkle with grated cheese. Bake in a hot oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 4-5 minutes. Garnish pizza meatballs with a pepperoni and marjoram. Arrange the meatballs on a large plate or in a bowl. Garnish oriental meatballs with lemon wedges and mint, cover Holsteiner meatballs with the bacon. Add yoghurt dip and ciabatta
