Yeast dough strips with plums and muesli sprinkles

Ingredients

  • 100 ml Milk
  • 1/2 cube (21 g) Yeast
  • 250 g Flour
  • 70 g Sugar
  • 80 g Muesli (Bircher Muesli)
  • 65 g Butter
  • 1 package Vanillin sugar
  • 7-10 Tbsp Salt
  • 1 egg (size M)
  • 750 g Plums
  • 100 g Apricot Jam
  • 2 TABLESPOONS Sugar crystals
  • baking paper

Directions

    Warm up the milk. Crumble yeast into it and mix with the milk. Put the flour in a bowl and make a depression in the middle. Sprinkle 50 g sugar on the edge of the flour. Pour yeast milk into the hollow and dust with some flour from the rim.

    Cover and leave to rise in a warm place for about 30 minutes. In the meantime grind the muesli coarsely. Knead with 20 g sugar and 40 g butter in flakes to form crumbles. Melt 25 g butter. Add butter, vanilla sugar, 1 pinch of salt and egg to the pre-dough.

    Work into a smooth dough with the dough hooks of the hand mixer. Cover and leave to rise again in a warm place for approx. 30 minutes. In the meantime clean, halve and stone the plums. Knead the yeast dough again and roll out to an oval flat cake (35 x 20 cm).

    Place diagonally on a baking tray lined with baking paper. Spread with half of the jam and place plums evenly on top. Spread crumbles on top. Let it rise again for about 15 minutes.

    Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 2) for 25-30 minutes. Remove from the oven. Heat up the rest of the jam and spread on the plums. Sprinkle with sugar crystals.
