Ingredients

Servings: 20
  • 175 ml Milk
  • 350 g Flour
  • 270 g + 2 tablespoons sugar
  • 1/2 cube (21 g) Yeast
  • 5 Eggs (size M)
  • 350 g Low-fat curd
  • 40 g Butter or margarine
  • 1 glass (370 ml) Cranberries
  • 1.5 kg Apples
  • 2 TABLESPOONS Lemon juice
  • 300 ml clear apple juice
  • 1 package Pudding powder "Vanilla Flavor"
  • 7-10 Tbsp Fat and flour

Directions

    Warm the milk lukewarm. Put flour, 60 g sugar and salt in a bowl. Make a depression in the middle. Dissolve yeast in the milk and pour into the depression. Dust with a little flour from the edge and let it rise covered in a warm place for about 15 minutes. In the meantime mix 4 eggs, quark and 210 g sugar.

    Cover and put in a cool place. Melt the fat. Add fat and 1 egg to the flour mixture and knead everything with the dough hooks of the hand mixer to a smooth dough. Dust with flour, cover and leave to rise in a warm place for another 30 minutes. In the meantime pour on the cranberries and drain well. Peel, quarter, core and cut apples into large pieces. Sprinkle with lemon juice. Mix 50 ml apple juice, 2 tablespoons sugar and pudding powder. Boil 250 ml apple juice. Add apples and simmer for about 5 minutes. Stir in the pudding powder and bring to the boil again. Add cranberries, except 2 teaspoons for decoration, and simmer for 1 minute.

    Mix 50 ml apple juice, 2 tablespoons sugar and pudding powder. Boil 250 ml apple juice. Add apples and simmer for about 5 minutes. Stir in the pudding powder and bring to the boil again. Add cranberries, except 2 teaspoons for decoration, and simmer for 1 minute. Remove from heat and let cool a little. In the meantime roll out the yeast dough to a rectangle (32 x 39 cm) and line a greased, flour-strewn fat pan of the oven (32 x 39 cm) with it. Add apple-cranberry compote and smooth it down. Spread the quark mixture evenly on top. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 40-45 minutes. Remove the cake and let it cool down. Decorate with remaining cranberries

    In the meantime roll out the yeast dough to a rectangle (32 x 39 cm) and line a greased, flour-strewn fat pan of the oven (32 x 39 cm) with it. Add apple-cranberry compote and smooth it down. Spread the quark mixture evenly on top. Bake in the preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 40-45 minutes. Remove the cake and let it cool down. Decorate with remaining cranberries
