Channel strips with apple-almond filling

Ingredients

  • 75 g + 60 g butter
  • 200 ml + approx. 3 tablespoons of milk
  • 400 g + some flour
  • 50 g + 1 tablespoon sugar, salt
  • 1⁄2 Cubes (21 g) fresh yeast
  • 1 Egg (Gr. M)
  • 1⁄8 l Maple syrup
  • 2 TEASPOONS Cinnamon
  • 75 g demerara sugar
  • 75 g Almond kernels (with skin)
  • 2 Apples (about 200 g each)
  • 1 TABLESPOON Lemon juice
  • 125 g Icing sugar
  • baking paper

Directions

    For the dough melt 75 g butter. Add 200 ml milk and warm it up lukewarm. Put 400 g flour, 50 g sugar and 1 pinch of salt in a bowl. Crumble the yeast and stir with 1 tbsp. sugar until liquid. Add milk mixture, yeast and egg to the flour and knead everything with the dough hooks of the mixer to a smooth dough.

    Cover and leave to rise in a warm place for about 45 minutes until the dough volume has doubled.

    Warm maple syrup and 60 g butter in a pot while stirring. Remove from heat, stir in cinnamon and brown sugar. Let the syrup cool down. Chop the almonds. Peel apples, quarter them, remove the core and cut the apple quarters into small pieces.

    Mix with lemon juice and the almonds.

    Preheat oven (electric cooker: 200 °C/circulating air: 175 °C/gas: see manufacturer). Knead the yeast dough again and roll out rectangularly (approx. 36 x 42 cm) on a slightly floured work surface. Place on a large sheet of baking paper.

    Spread the syrup mixture on the dough plate, leaving a rim of approx. 3 cm all around and spread the apple mixture on top. Form a strip of dough. Roll up the long sides of the dough one after the other with the help of the baking paper until they are firm.

    Place the strips of chanel with the baking paper on a baking tray and bake in a hot oven for about 25 minutes. Let it cool down. Stir icing sugar with approx. 3 tbsp. milk until smooth. Use a spoon to spread the icing on the kanel strip.
