Ingredients

  • 2 Organic limes
  • 3 TABLESPOONS + 75 g sugar
  • 90 g Butter or margarine
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 2 ( size M ) Eggs
  • 150 g Flour
  • 2 coated Tsp Baking Powder
  • 80 ml Mango Lassi
  • 125 g Icing sugar
  • 7-10 Tbsp Fat and flour

Directions

    Wash the limes and grate them dry. Cut 1 lime into very thin slices. Turn the lime slices in 3 tablespoons of sugar and place them on an oven rack. Slide a baking tray under the grid. Dry the lime slices in a preheated oven (electric cooker: 75 °C) for 2 hours. Switch off the oven and continue drying for approx. 1 hour with residual heat.

    Thinly grate the zest of 1 lime. Halve the lime and squeeze it. Cream the fat, lime zest, sugar, salt and vanilla sugar with the whisk of the hand mixer. Stir in the eggs one after the other. Mix flour and baking powder and stir alternately with lassi and 1 tablespoon lime juice into the dough. Grease the hollows of a mini muffin tray (24 hollows) and dust with flour. Pour in the dough. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 15-25 minutes. Take the tray out of the oven and after about 10 minutes turn the muffins onto a cake rack and let them cool down. Sift icing sugar into a bowl. Add 1-2 teaspoons of lime juice and mix to a thick glaze. Spread the icing over the muffins and leave to dry for about 1 hour.

    Pour in the dough. Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 15-25 minutes. Take the tray out of the oven and after about 10 minutes turn the muffins onto a cake rack and let them cool down. Sift icing sugar into a bowl. Add 1-2 teaspoons of lime juice and mix to a thick glaze. Spread the icing over the muffins and leave to dry for about 1 hour. Halve the lime slices. Cut the muffins slightly and put 1/2 lime slice into each of the notches
