Buttermilk wafers with lemon sorbet

Ingredients

  • 60 g Butter or margarine
  • 250 g Flour
  • 35 g Sugar
  • 1 1/2 TSP. Baking Powder
  • 1 pinch Salt
  • 500 ml Buttermilk
  • 2 Eggs (size M)
  • 2 TEASPOONS Vanilla Flavor
  • 2 tablespoons (20 g) Oil for greasing
  • 250 g Raspberries
  • 500 g Lemon sorbet
  • 7-10 Tbsp grated zest of 1 untreated lemon for sprinkling
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Mint

Directions

    Melt the fat in a small pot, let it cool down a little. Mix flour, sugar, baking powder and salt in a bowl. Whisk buttermilk and eggs. Pour into the flour mixture while stirring and mix to a smooth, thin wafer dough.

    Put 1 sorbet ball on each wafer. Serve with raspberries. Sprinkle with lemon zest and dust with icing sugar. Decorate with mint.
