Papaya with meringue and orange sauce

Ingredients

  • 2 untreated oranges
  • 1/2 TEASPOON freshly grated ginger
  • 1 TABLESPOON Honey
  • 1 TEASPOON Cornstarch
  • 2 Papayas
  • 3 Protein (size M)
  • 100 g Sugar
  • 7-10 Tbsp Mint and Physalis

Directions

    Wash one orange and dab dry. Rub off the peel. Cut all oranges in half and squeeze 200 millilitres of juice. Boil up the orange juice, zest, ginger and honey. Stir the starch into a little cold water. Stir into the sauce and cook for one minute.

    Let it cool down. Cut the papayas in half and remove the seeds. Beat the egg whites until stiff, adding sugar. Fill the papayas with beaten egg white and bake in a preheated oven (electric range: 225 °C/ gas: level 4) for two to three minutes. Arrange papayas and sauce on plates. Decorate as desired with mint and physalis
