Peel the orange so that the white skin is completely removed. Remove the fillets with a sharp knife between the parting skins. Squeeze the juice out of the parting skins. Peel and slice the kiwi.
Halve the slices. Mix the orange filets and kiwis with the orange juice. Mix egg whites, 1 teaspoon maple syrup and almonds in a bowl. Heat the oil in a frying pan. Add 1 tbsp. of batter to each and sprinkle with flaked almonds.
Bake pancakes from both sides until golden brown. Arrange pancakes and fruit, drizzle with 1 teaspoon of syrup and decorate with mint.
