Melt the fat. Mix eggs, salt and sugar until creamy. Stir in crème frâiche. Mix flour, baking powder and stir into the egg mixture. Stir in the fat.
Peel and slice the bananas, sprinkle with lemon juice. Heat oil in portions in a pan. Put 4 x 1 heaped tablespoon of dough into the pan, place 3-4 slices of bananas on each, fry on each side until golden brown. Bake the rest of the dough in the same way. Arrange the pancakes on a plate, serve with maple syrup
