Orecchiette with sausage balls

Ingredients

Servings: 4
  • 7-10 Tbsp salt, pepper
  • 100 g Arugula
  • 2 Garlic cloves
  • 4 Anchovy fillets (glass)
  • 1 red chilli pepper
  • 3 Tomatoes
  • 400 g short pasta (e.g. orecchiette)
  • 3 TABLESPOONS Olive oil
  • 4 (approx. 400 g; e.g. salsicce) coarse bratwursts

Directions

    Bring 3-4 l salted water (1 teaspoon salt per litre) to the boil. Select the rocket, wash and drain well. Peel garlic and chop finely. Rinse anchovies, dab dry and chop. Clean and wash the chillies and cut them into fine rings with seeds.

    Wash and chop the tomatoes.

    Add the pasta to the boiling salted water and cook according to the instructions on the packet. Heat the oil in a pan. Press the sausage meat directly from the skin in small portions into the pan and add 8-10 M

    Fry the garlic, anchovies and chilli briefly. Add the tomatoes, bring to the boil once. Drain the pasta and put it back into the pot. Mix with the sausage mix. Fold in the rocket salad. Serve everything. Serve with parmesan.
