Cook the gnocchi in boiling salted water according to package instructions. Then drain and drain well.
Meanwhile peel and finely dice the onion. Fry the bacon in a pan without fat until crispy and take it out. Fry the onion in the bacon fat until transparent. Deglaze with cream, bring to the boil and simmer for 4-5 minutes.
Stir in mustard, bring to the boil briefly.
Wash the chives, shake dry and cut into fine rolls. Season mustard cream with salt, pepper and 1 pinch of sugar. Fold in cooked gnocchi and chives and heat up briefly.
Gnocchi. Crumble a part of the bacon and sprinkle with the bacon slices.
