Orange-pumpkin seed muesli bar

Ingredients

  • 200 g Pumpkin seeds
  • 200 g crunchy oats
  • 130 g Butter
  • 120 g Honey
  • 2 cm fresh ginger root
  • 200 g baked muesli (e.g. Seitenbacher)
  • 30 g Flour
  • 200 g candied orange slices
  • 1 Protein (size M)
  • baking paper

Directions

    Coarsely chop the seeds and roast them in a pan without fat. Take out and let cool down. Roast oat flakes as well. Peel ginger and chop finely. Cut orange slices into small pieces

    Melt the butter, stir with honey and ginger in a large bowl until smooth. Add oat flakes, muesli, flour, seeds and orange pieces and mix well. Beat the egg whites until stiff and fold into the mixture

    Pour the muesli mixture onto a baking tray lined with baking paper. Form into a rectangle (L: 30 cm x W: 20 cm x H: 2 cm). Bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for approx. 25 minutes until slightly browned and pressure-resistant. Allow to cool for approx. 10 minutes, then cut into 20 bars (each approx. 4 x 10 cm)
