Noodles with vegetable mince sauce

Ingredients

  • 2 Garlic cloves
  • 250 g Tomatoes
  • 150 g Mini eggplants
  • 1 Stalk of rosemary and sage
  • 3 TABLESPOONS Olive oil
  • 200 g minced lamb
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Aiwar (spicy-hot spice paste)
  • 7-10 Tbsp fresh herbs
  • 400 g ribbon noodles
  • 7-10 Tbsp Sage and rosemary

Directions

    Peel the garlic and press it through a garlic press. Wash and clean the tomatoes and eggplants. Cut aubergines into thin slices. Wash the herbs. Strip rosemary needles from the stalk.

    Remove sage leaves, cut larger ones into fine strips. Heat oil in a pan. Sauté the garlic, minced meat and aubergines for about 10 minutes, stirring occasionally. Meanwhile cook the noodles in boiling salted water for about 8 minutes. Cut tomatoes into pieces. Season the minced sauce with salt, pepper, ajwar and prepared herbs. Add tomatoes and 400 ml water. Let it boil down for another 5 minutes at high heat. Season the sauce if necessary.
