Noodles with tomato sauce and salsicce sausage

Ingredients

Servings: 4
  • 1-2 Aubergines (approx. 350 g)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 600 g ripe bottle tomatoes
  • 1 medium onion
  • 2 Garlic cloves
  • 3 Salsicce sausages (Italian pork bratwursts; 125 g each)
  • 4-5 small sage leaves
  • 1-2 TABLESPOONS Flour
  • 1 TABLESPOON Olive oil
  • 400 g Penne (e.g. Tortiglioni)
  • 1 knife tip dried crushed chillies
  • 7-10 Tbsp Vinegar

Directions

    Clean and wash the aubergines and cut them in half lengthwise. Cut aubergines into half slices and salt them. Wash and coarsely dice the tomatoes. Peel and finely dice onion and garlic.

    Cut the sausage into slices. Wash sage, dab dry and cut into strips. Dab aubergines dry and turn in flour. Heat oil in a large frying pan. Fry the sausage for about 5 minutes, turning it over.

    Take it out. Meanwhile cook the noodles in plenty of boiling salted water for 10-12 minutes. Fry aubergines in hot sausage fat while turning them golden brown. Add the onion and garlic and fry. Season with salt and pepper.

    Add tomatoes, sausage, chilli and sage. Bring everything to the boil and simmer for about 10 minutes. Season tomato sauce with vinegar, salt and pepper. Drain the pasta and let it drain. Mix with the tomato sauce.
