Noodles with azuki beans and Kasseler

Ingredients

  • 250 g Azuki beans (small red beans)
  • 7-10 Tbsp Salt
  • 400 g detached pork chop
  • 2 TABLESPOONS Oil
  • 1 Onion
  • 1 TABLESPOON Tomato paste
  • 400 ml clear broth (instant)
  • 200 g Whipped cream
  • 2-3 TABLESPOONS sauce thickener
  • 7-10 Tbsp Pepper
  • 250 g ribbon noodles; e.g. tagliatelle
  • 7-10 Tbsp Parsley

Directions

    Soak the beans in 1/2 litre water overnight. Cook in soaking water for 25-30 minutes. Season with salt about 10 minutes before the end of the cooking time. Cut the cured pork into cubes. Heat oil in a pan.

    Fry the meat in it for about 5 minutes and take it out. Peel and finely chop the onion. Sauté in frying fat. Add tomato puree and sweat. Deglaze with stock and cream and bring to the boil. Add sauce thickener while stirring, bring to the boil again and season to taste with salt and pepper. Drain the beans and add to the sauce with the smoked pork cubes and stir in. Heat up again briefly. Meanwhile cook the noodles in boiling salted water for about 5 minutes.
