Muesli bars with curd and fruit

Ingredients

Servings: 8
  • 400 g dark wheat flour (type 1050)
  • 1 coated Tsp Salt
  • 2 TABLESPOONS sugar, 1/8 l milk
  • 1 cube (42 g) yeast, 5 tablespoons oil
  • 50 g dried apricots
  • 50 g crunchy oats
  • 50 g Raisins
  • 75 g Hazelnut kernels
  • 50 g Sunflower seeds
  • 250 g Curd (20 % fat)
  • 5 TABLESPOONS Mineral water
  • 4 mandarins, 2 bananas
  • 2 TABLESPOONS Lemon juice
  • maple syrup, baking paper

Directions

    Mix flour, salt and 1 tablespoon of sugar. Warm milk and 1/8 l water slightly. Dissolve yeast in it. Pour yeast and oil into the flour and knead with the dough hooks of the hand mixer until smooth. Cover the dough and let it rise in a warm place for 30-40 minutes

    Dice the apricots. Knead the dough with the dough hooks. Knead in oatmeal, raisins, apricots and nuts. Form 8 long sticks from the dough with well floured hands

    Roll the sticks in the sunflower seeds and place them on a baking tray lined with baking paper. Cover and leave to rise for another 15 minutes. Bake in the preheated oven (electric cooker: 200 °C / convection oven: 175 °C / gas: level 3) for 18-20 minutes. Allow to cool on a grid

    Mix quark, mineral water and 1 tablespoon sugar. Peel and chop the fruit. Mix with lemon juice. Cut the muesli sticks open, spread with quark and sprinkle with maple syrup. Add the fruit
