Pancakes with apple compote

Ingredients

Servings: 4
  • 1 kg sour apples
  • 100 g + 3 tablespoons sugar
  • 4 TABLESPOONS Lemon juice
  • 200 ml clear apple juice
  • 2 Eggs (size M)
  • 200 ml Milk
  • 100 g Flour
  • 1/2 TEASPOON Baking Powder
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 20 g clarified butter
  • 7-10 Tbsp Mint

Directions

    Peel, quarter, core and dice the apples. Bring apples, lemon juice, apple juice and 75 g sugar to the boil, cover and simmer for 8-10 minutes. Let cool off. In the meantime, whisk the eggs with the milk in a bowl. Mix flour and baking powder, add 3 tablespoons of sugar, salt and vanillin sugar and mix to a smooth dough.

    Let dough rest for 5-10 minutes. Heat up the clarified butter in portions in a coated pan (28 cm Ø). Bake 4 pancakes one after the other. Arrange the pancakes and apple compote on plates, decorate with mint
