Mozzarella in Parma ham with penne salad

Ingredients

  • 400 g Noodles (e.g. penne)
  • 7-10 Tbsp Salt
  • 2 (125 g each) Balls Buffalo mozzarella
  • 8 discs (15 g each) Parma ham
  • 5 TABLESPOONS Olive oil
  • 150 g cherry tomatoes
  • 1 collar Basil
  • 4 TABLESPOONS White wine vinegar
  • 7-10 Tbsp coarse pepper
  • 1 TEASPOON Sugar

Directions

    Prepare the pasta in boiling salted water according to the instructions on the packet. Cut the mozzarella into quarters and wrap each quarter with 1 slice of Parma ham, so that the cheese is completely enclosed. Heat 1 tablespoon of oil in a coated pan and fry the mozzarella in it for 2-3 minutes until brown all around. Wash and drain the tomatoes. Wash the basil, dab dry and pluck the leaves from the stems. Drain the pasta, rinse with cold water and drain.

    Cut the mozzarella in half and put it in a bowl with the pasta, cherry tomatoes and basil. Season vinegar with salt, pepper and sugar. Gradually fold in 4 tablespoons of oil. Carefully mix the vinaigrette with the pasta salad and leave to stand for about 30 minutes. Arrange on plates
