Mix the baking mix and 250 ml lukewarm water with the dough hooks of the hand mixer to a smooth dough. Form the dough into a roll and cut into 16 slices. Press a little flat. Mix tomato paste with herbs, season with salt and pepper. Spread the pizza bases with it. Wash the tomatoes, dab dry and cut into slices.
Drain mozzarella and cut into slices. Cover pizzas with tomatoes and mozzarella. Place on 2 baking trays lined with baking paper. Bake in the preheated oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: level 3) for 10-15 minutes. In the meantime, pluck the rocket, wash and spin dry. Garnish pizzas with rocket and serve immediately
