Mini hack burgers

Ingredients

Servings: 10
  • 1 1/2 Bread rolls from the previous day (approx. 60 g)
  • 1 big onion
  • 750 g mixed minced meat
  • 2 Eggs (size M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sweet peppers
  • 4-5 Tbsp Oil
  • 1 collar Rocket (50-60 g)
  • 200 g Cherry tomatoes (not too small !)
  • 75-100 g Mustard cream

Directions

    Soak rolls in cold water. Peel and finely chop the onion. Squeeze the bread roll well and knead with minced meat, eggs and onion. Season with salt, pepper and paprika. Form approx. 50 walnut-sized meatballs with moistened hands. Heat some oil in a large pan and fry the meatballs in portions at medium heat for 5-6 minutes. Let the meatballs cool down.

    In the meantime, clean, wash and drain the rocket and tomatoes. Cut the rocket leaves into pieces, depending on size, and the tomatoes into slices. Halve the meatballs and spread the lower halves with mustard cream. Cover with rocket and 1 tomato slice each and cover with the upper halves. Arrange mini-chopped burgers on a plate and keep cool until serving. Results in about 50 burgers
