Clean, wash and dice the tomatoes. Peel and finely dice onions. Carve the chillies lengthwise, remove seeds and chop finely. Wash and chop thyme. Mix tomatoes, half of the onion cubes, thyme, chili, mustard seeds, vinegar and brown sugar. Season with salt and simmer for about 15 minutes. In the meantime wash the maties and cut them into small cubes.
Wash the apples, quarter them, remove the seeds, also finely dice them and sprinkle with lemon juice. Wash and chop the dill. Mix the matie, remaining onion cubes, apple and dill. Season with pepper. Cut baguette into about 8 diagonal slices and halve them again. Cover one half with matie tartare, the other half with tomato relish. Garnish the relish with halved olives, parmesan slices and thyme leaves
