Wash apples and grate them dry. Cut out approx. 8 balls from each apple with a ball cutter. Drizzle the apple balls immediately with approx. lemon juice and put them on colourful skewers.
Caramelise the sugar in a pot until golden. Add butter and melt. Remove the pot from the stove. Quickly cover apple balls with caramel using a tablespoon. Drain and dip into colourful sugar pearls. Leave to dry.
