  • 750 g Strawberries
  • 100 g Meringue
  • 300 g Flour
  • 150 g Cornstarch
  • 1 pck. Baking Powder
  • 300 g soft butter
  • 225 g demerara sugar
  • 75 g demerara sugar
  • 1 pck. Vanilla sugar
  • 7-10 Tbsp Salt
  • 6 Eggs (Gr. M)
  • 7-10 Tbsp Fat and flour

Directions

    Wash and clean the strawberries. Depending on the size, halve or quarter them. Crumble meringue coarsely.

    For the dough, mix flour, starch and baking powder. Mix butter, 225 g sugar, vanilla sugar and 1 pinch of salt with the whisk of the mixer for about 5 minutes until creamy. Stir in eggs individually and alternately with 1 tbsp. flour mixture. Stir in the rest of the flour mixture briefly. Fold meringue, except for a little bit for sprinkling, and strawberries loosely into the dough.

    Spread the dough into a greased and flour-strewn fat pan (approx. 32 x 39 cm). Sprinkle with 75 g sugar. Bake in a preheated oven (electric cooker: 175 °C/circulating air: 150 °C/gas: see manufacturer) for approx. 45 minutes. Sprinkle cake with remaining meringue and let it cool down. Whipped cream goes well with it.
