Apple cup with stracciatella quark

Ingredients

  • 1.5 kg Apples (e.g. Elstar)
  • 200 ml apple juice
  • 5 TABLESPOONS Sugar
  • 1/2 TEASPOON Cinnamon
  • 400 g dark chocolate cocoas
  • 4-5 Tbsp Wild cranberries (glass)
  • 250 g Low-fat curd
  • 1 pck. Vanilla sugar
  • 1 Organic Lemon
  • 250 g Whipped cream
  • 2 TABLESPOONS Chocolate flakes

Directions

    For the compote, peel, quarter, core and chop apples. Bring apple juice, 2 tbsp. sugar and cinnamon to the boil in a saucepan, cover and simmer for about 10 minutes until the apples start to crumble. Let cool down a little.

    Coarsely crumble the cookies with your hands and, except for about 2 tbsp. for decoration, place them in a large glass bowl (approx. 2 l capacity). Spread the compote on top, and add the cranberries in splotches. Let it cool down.

    For the quark, stir the quark, 3 tbsp. sugar, vanilla sugar, lemon zest and juice until smooth. Whip the cream until stiff. Fold into the quark with chocolate shavings. Spread on the compote and sprinkle with remaining crumbs.
