Minced steaks à la Holstein

Ingredients

Servings: 4
  • 2 Onions
  • 2 TABLESPOONS Capers
  • 500 g mixed minced meat
  • 5 Eggs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1-2 TEASPOONS fine, medium hot mustard
  • 1 glass (720 ml; separation weight: 400 g) fine young green beans
  • 25 g Butter or margarine
  • 1 package (25 g) frozen parsley
  • 1 TABLESPOON Oil
  • 8 discs Bacon
  • 1/2 glass (310 ml; drained weight: 215 g) pickled beetroot
  • 7-10 Tbsp Parsley

Directions

    Peel and chop the onions. Chop 1 tablespoon of capers. Knead minced meat, 1 egg, half of the onions, chopped capers, salt, pepper and mustard. Form 4 flat oval minced steaks. Bring the beans and the stock to a boil in a saucepan and drain.

    Heat 20 g of fat in a pot and fry the remaining onions in it until transparent. Add beans and parsley and heat while tossing. Season to taste with salt and pepper. Keep warm. Brush a grill pan with oil, heat it up and fry the minced steaks in it from both sides for about 4 minutes.

    Leave the bacon out in another pan until crispy (possibly add the remaining fat). Beat the remaining eggs, slide them onto the bacon slices and fry them. Sprinkle with salt and pepper.

    Spread the fried eggs and bacon over the minced steaks. Sprinkle with remaining capers. Serve with beans and drained beetroot. Serve garnished with parsley. Roast potatoes taste good with it.
