Cut the melon into slices with a large knife. Remove the flesh from the skin and cut into slices. Wash the lemon balm and cut into strips, except for a few leaves for decoration. Mix with lemon peel and juice. Pour over the melon and chill covered for about 1 hour
Slightly brown the almonds in a dry pan while turning. Take them out and let them cool down
Wash the grapes, dab dry, cut in half and possibly remove the seeds. Peel and slice the bananas. Mix immediately with melon, grapes, sugar and vanilla sugar. Arrange fruit salad on four plates and sprinkle with almonds. Decorate with the rest of the lemon balm
