Melon-Peach-Jam

Ingredients

  • 3 Stem(s) Mint
  • 1/2 (approx. 350 g) cantaloupe melon
  • 10 Peaches (about 130 g each)
  • 500 g Super gelling sugar 3:1
  • 100 ml Apricot Liqueur

Directions

    Pluck the mint leaves from the stalks, wash and dab dry. Cut the mint into strips and set aside. Remove seeds from melon and peel. Cut 250 g melon flesh into cubes.

    Put peaches in boiling water and blanch briefly. Remove the peaches, rinse with cold water and peel off the skin. Cut the fruit in half, stone and dice the flesh, weigh 1150 g.

    Put the peach and melon cubes in a pot and puree some of the fruit with a blender. Stir in jam sugar. Bring everything to the boil while stirring over high heat. Cook for at least 3 minutes while stirring constantly.

    Stir in mint and liqueur. Pour the jam into clean, hot rinsed twist-off jars, close them and place them on the lid for about 5 minutes.
