Melon and vegetable rice with feta cheese

Ingredients

  • 30 g Long grain rice, parboiled
  • 7-10 Tbsp Salt
  • 100 g Courgette
  • 1/2 (100 g) red pepper
  • 100 g Carrots
  • 200 g Honeydew melon
  • 1 Garlic clove
  • 1 TEASPOON Oil
  • 7-10 Tbsp Pepper
  • 25 g coarsely grated sheep's cheese

Directions

    Put the rice in 75 ml boiling salted water, cover and let it swell for about 20 minutes at low heat. In the meantime clean, wash and drain the zucchini, peppers and carrots.

    Halve the zucchini and carrots lengthwise and cut the halves diagonally into pieces. Cut the peppers into large slices. Clean and dice the melon. Peel garlic and press it through a garlic press.

    Heat the oil in a pan and fry the vegetables and garlic for 5-6 minutes. Season with salt and pepper and mix in the melon cubes. Drain the rice and arrange on a plate with the melon vegetables.

    Serve sprinkled with feta cheese.
