Mediterranean meatballs with tomato salad (slim in sleep)

Ingredients

Servings: 2
  • 2 Onions
  • 2 Garlic cloves
  • 300 g Courgette
  • 50 g Rocket
  • 200 g Beefsteak minced meat
  • 1 TABLESPOON Breadcrumbs
  • 1 TABLESPOON frozen Italian herb mix
  • 1 egg (size S)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 50 ml Vegetable broth
  • 3 TABLESPOONS Red wine vinegar
  • 1 small bunch of spring onions
  • 6 Tomatoes
  • 20 g Parmesan cheese
  • 7-10 Tbsp Oil

Directions

    Peel onions and 1 clove of garlic and cut into fine cubes. Heat 3 tablespoons of water in a saucepan. Sauté onions and garlic for about 4 minutes while turning them. Wash, clean and roughly grate the zucchini. Clean, wash, spin dry and finely chop the rocket

    Knead prepared ingredients, minced meat, breadcrumbs, herbs and egg. Season with salt and pepper. Shape into meatballs. Peel the remaining garlic and press through a garlic press. Mix stock, vinegar, garlic and season to taste with salt and pepper. Clean and wash spring onions and cut them diagonally into rings. Wash, clean and slice the tomatoes

    Spread a thin layer of oil on a coated pan. Fry the meatballs for approx. 8 minutes while turning. Arrange tomatoes, spring onions and meatballs. Drizzle tomatoes with prepared salad dressing. Slice Parmesan cheese over it
