Giant rösti with apple compote

Ingredients

  • 1 Carrot (approx. 150 g)
  • 250 g Potatoes
  • 1 egg (size M)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly grated nutmeg
  • 1 TABLESPOON Sunflower oil
  • 1/2 Apples
  • 1 TEASPOON Sugar
  • 50 ml apple juice
  • 1 Organic Lemon
  • 50 g Low-fat curd

Directions

    Peel the carrot. Peel and wash the potatoes. Coarsely grate potatoes and carrot. Squeeze the grater.

    Mix grater and egg. Season with salt and nutmeg. Heat oil in a pan (approx. 20 cm Ø) and form potato mixture into a Rösti. Fry for approx. 15 minutes, turning carefully

    Wash the apple, quarter it, remove the core and cut the quarters into thin slices. Caramelise the sugar in a pot. Deglaze with apple juice, bring to the boil and stew apple slices for about 5 minutes. Pour into a sieve and collect the juice. Wash lemon hot, grate dry, peel off some peel for decoration with a zest ripper. Cut the fruit in half and squeeze the juice from one half.

    Mix quark, 1-2 tbsp. apple stock and 1-2 tsp. lemon juice. Arrange the rösti, quark and apple compote. Sprinkle with lemon peel
