Meatballs with yoghurt vegetables

Ingredients

Servings: 4
  • 1 Onion
  • 350 g Minced beef
  • 2 tablespoons (10 g each) Breadcrumbs
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Oil
  • 1 (600 g) giant cucumber
  • 2 (125 g each) red peppers
  • 500 ml Vegetable broth (instant)
  • 2 (150 g each) Mug of whole milk yoghurt
  • 3 teaspoons (5 g each) Cornstarch
  • 1 collar Dill

Directions

    Peel and finely chop the onion. Knead minced meat, onion and breadcrumbs. Season with salt and pepper. Form balls and fry in a pan in hot oil. Clean and wash cucumber and paprika. Cut the paprika into strips. Halve cucumber lengthwise and cut into slices. Blanch the vegetables for 3 minutes in the broth. Stir yoghurt and starch until smooth and add to the stock. Season to taste with salt and pepper. Wash the dill, dab dry and cut finely. Arrange vegetables with minced meat balls and sprinkle with dill
